Risotto

Ingredients:

Arborio Rice 1 Cup

Chicken Stock 4 Cups

Thyme

Bayleaf

Garlic

Onion

Celery

Salt

Shrimp (Optional)

- Add 4 cups of chicken broth and one cup of water

- Simmer on Low Heat

ree

- Cold start the garlic slowly. That's the best way to extract the flavour into the oil without burning it

- Add the onion and celery and cook will they become soft

ree

- Add Rice

ree

- Add One Ladle (1/2 cup at a time) of broth

- Let it absorb on medium heat

ree

- Keep stirring to release the starch and induce creaminess

- It takes 40-50 minutes of of pour-stir-absorb action to absorb all 5 cups of stock

- Optionally, pan sear some shrimp

ree
